Rocky Road Heaven
I love chocolate. It’s as simple as that. Dark or milk, I’m not fussy. However, I do prefer chocolate with a little crunch. Biscuit, fruit or honeycomb. I think that this has stemmed from childhood. My Mum used to buy a bar of Galaxy for herself, and a bar of Cadbury’s Nut for my Dad. I used to sit a little closer to Dad on the sofa and before you knew it, the bar was no more!
Chocolate makes me smile so therefore National Chocolate Week could not go by uncelebrated. Whether I’m eating it or cooking with it, I love the aroma.
My kitchen this week has been one glorious sweet smell. Starting with Chocolate Cake for meetings at work and finishing with delicious Rocky Road, ready for the weekend and cups of tea whilst gardening (if it lasts that long)
Rocky Road is the easiest thing in the work to make, and although there’s a recipe, you can add or take away what you want.
My Rocky Road ingredients are:
- 1 x bag of McVites Caramel Digestive nibbles
- Handful of Marshmallows – if you can only find large marshmallows then quarter them
- 110g unsalted butter
- 100g of chocolate
- 2tbp of Golden Syrup
- 2tbp of cocoa
- 90g of brown sugar
Put butter, cocoa, golden syrup and sugar in a pan and melt. I added 5 squares of my 100g chocolate in too (naughty I know)
Remove from heat and let the liquid cool slightly before adding in the marshmallows and caramel balls.
Pour into a tray and leave in the fridge for 4-5 hours to set.
Melt remaining chocolate and smooth over the top of your rocky road base (because you can never have enough chocolate)
Put back in the fridge so that the chocolate goes hard before cutting into sections.
Tip: Warm your knife before cutting, this will help slice through your rocky road easier.
