The Start of Something Special… Welcome to Pudding Club
New for 2017, Welcome to Eden’s Pudding Club.
Because we think everyone needs pudding, a little indulgence is good for the soul.
For our first dessert, we thought we’d start with something easy – Chocolate Mousse. If, like us, you were inundated with chocolate for Christmas, this may be a good way to eat your way through some of those Chocolate Santas!
300ml Double Cream
140g good-quality dark chocolate (we mixed dark and milk chocolate)
A few drops of vanilla extract
In a bowl over simmering water, melt your chocolate with 100ml of the cream. Stir frequently until you get a creamy mixture.
Whip the remaining cream in a separate bowl until stiff peaks are formed.
Once the chocolate/cream mixture has fully melted and cooled, combine with the whipped cream, and, using a hand mixer, whip the mixture together.
Spoon into 4 small glasses and chill until serving.
